Vinification: The harvest usually begins in the first week of September. It is hand picked using small wooden boxes and then painstakingly hand selected choosing only the best grapes from the Elisena area vineyards, rich in fragrance and flavor The grapes are immediately transferred to the cellar and are destemmed and gently pressed. The must is then cooled to a temperature of 10°C. for about 16 hours in order to induce clarification, and then transferred into temperature controlled stainless steel tanks for the alcoholic fermentation process occurs at a temperature kept below 18°C. The wine is then transferred into stainless steel tanks for three months to obtain a spontaneous clarification. Successively part of the product is transferred for three months into new, medium toast French Allier barriques. After this period of time the wine carefully blended (30% French barrel, 70% steel) and then returned to the barrels for about 12 months before being bottled.
Sensory analysis: Intensely fruit bouquet deriving from the unmistakable varied flavor of two types of grapes and of the subtle woody presence. To the palate it is harmonious, soft and well structured.
