Vinification: The harvesting for the Merlot grapes begins by mid September while for Cabernet Souvignon begins by mid October. The grapes, previously thinned, are painstakingly selected, manually harvested and gathered in small wooden boxes for transport to the cellar. The grapes are then destemmed, gently crushed and are allowed to macerate in large fermentators for about 15-18 days while being periodically submerged for better extraction of color, fragrance complexity and tannins. The Cabernet S. and Merlot wines are then carefully blended and allowed to rest for 6 months before being transferred into barriques (Allier M.T. Troncais M.T.) for about 12 months.
Sensory analysis: Intense ruby red in color. Intense fruit with hints of toast, coffee and dark chocolate. Finely structured with soft tannins and a lingering finish.
